Job Description

We are looking to hire a commendable Executive Chef to manage our kitchen staff and to resolve kitchen issues swiftly. The Executive Chef will attract and retain staff, maintain a cooperative relationship with team members, optimize staff productivity and serves as replacement in team members' absence. You will train staff to use new recipes, cooking techniques and equipment, and oversee cooks performing food preparation. You will oversee delivery of food supplies, prepare special dishes and supervise overall kitchen operation during service.
Responsibilities :
Trains, develops and motivates supervisors and culinary staff to meet and exceed established food preparation standards on a consistent basis.
Teaches preparation according to well defined recipes and follows up and discusses ways of constantly improving the cuisine at the property.
Should be able to provide direction for all day-to-day operations in the kitchen.
Understand employee positions well enough to perform duties in employees' absence or determine appropriate replacement to fill gaps
Ensures promptness, freshness and quality of dishes.
Implements hygiene policies and examines equipment for cleanliness.
Designs new recipes, plans menus and selects plate presentation.
Reviews staffing levels to meet guest service, operational and financial objectives.
Hires and train kitchen staff, such as cooks, food preparation workers and dishwashers.
Performs administrative tasks, take stocks of food and equipment supplies, and monitors purchase orders.
Sets and monitors performance standards for staff.
Ensures proper grooming and hygiene standards for all kitchen staffs.
Interacts with guests to obtain feedback on food quality, presentation and service levels.
Review weekly and monthly schedules to meet forecast and budget.
Attend the daily morning meetings and other administrative sessions.
Able to perform additional duties as requested by the management as and when required.
Requirements :
3 Year Hospitality Management or equivalent Culinary university degree.
2+ years experience in a similar capacity/position in a five star property .
Sound knowledge of food profession principles and practices.
Proficient knowledge of human resources management.
Excellent knowledge of BOH systems, ordering and inventory.
Excellent communication skills.
Ability to meet deadlines.
Available to work on call, shifts, after hours, over weekends and on public holidays.
